Idli is a beloved fermented breakfast cake that is incredibly light and easy to digest. Achieving the perfect cloud-soft texture is not a matter of luck; it is a science. It requires selecting the right rice-to-lentil ratio and providing the optimal environment for wild fermentation.
The Golden Ratio
To make the perfect batter, use a ratio of 2 parts idli rava (coarsely ground parboiled rice) to 1 part whole white urad dal (black gram). The urad dal acts as the foaming agent, trapping air bubbles, while the rice provides structure.
Tips for Successful Fermentation
- Temperature: Keep the batter in a warm, draft-free place (80°F to 90°F / 27°C to 32°C). In colder climates, place the batter inside an oven with the oven light turned on.
- No Iodized Salt: Use rock salt or sea salt. Iodine can inhibit the growth of wild fermenting yeasts.
- Time: Allow 8 to 12 hours for the batter to double in volume and develop a mild, pleasant sour aroma.
