The Ritual of Filter Coffee
For millions of South Indians, morning does not officially begin without filter coffee. This strong, milky brew is not just a drink; it is a cherished daily ritual. It is prepared using a traditional brass drip filter and served in a classic tumbler and dabarah (saucer).
The Perfect Blend
Authentic filter coffee requires a blend of 70% to 80% dark-roasted Arabica or Robusta coffee beans and 20% to 30% chicory root. The chicory adds thickness, a deep color, and a pleasant bitterness to the extract, helping it hold up against hot milk.
How to Brew
- Add Coffee Powder: Add 3-4 tablespoons of the blend to the top compartment of the filter.
- Tamp Gently: Use the plunger to press the coffee grounds down slightly.
- Pour Boiling Water: Slowly pour boiling water over the grounds, cover, and let it drip for 15-20 minutes to collect the decoction.
- Mix and Froth: Mix a small shot of decoction with hot, boiling milk and sugar. Pour it back and forth between the tumbler and dabarah to dissolve the sugar and create a thick head of foam.
